I like a little time off from the kitchen on Sunday mornings. I prefer to step back and let my children have a turn at planning and making the cooked breakfast of their choice. I help them adapt the recipe and ingredients and then they are on their own. Pancakes are a favourite and, whilst simple to make, involve enough weighing, measuring and flour bombing to make it fun. Not to mention the discovery that pancakes make the perfect yin yang symbol when cut just right!
Here is the ingredient list we devised:
- 250g spelt flour
- 60g melted coconut butter (and then some extra for the pan)
- Pinch salt
- 1.5 – 2 cups rice milk
- 2 eggs
These were served with some frozen berries that had been cooked with a splash of water and a little lemon juice. They weren’t too sweet and the children felt as though they made their own jam. I recommend it. Then top with natural yoghurt or ricotta.
Voila. Your own yin yang symbols.
