I am a huge fan of the Ayurvedic principles of eating appropriately for your constitution (dosha) and for the seasons. Summer is the Pitta time of year and cooling foods can help to create balance and reduce the effects of overheating (both body and mind). Think cooling and calming.  This is a great refreshing summer salad with cucumber, zucchini and sprouts which are all very cooling vegetables. If you are someone who struggles with the summer heat here is the perfect antidote.

Shades Of Green Salad

  • shaved zucchini
  • diced cucumber
  • sprouted green lentils
  • pumpkin seeds
  • lemon juice
  • diced preserved lemon
  • generous amount of olive oil
  • pinch of himalayan sea salt
